Elevate your pasta salad experience with this Barilla Gemelli Pasta Salad. Al dente Barilla Gemelli combines with ripe strawberries, creamy avocado, aromatic basil, and velvety bocconcini cheese, all dressed in a tangy balsamic vinaigrette. It’s the perfect balance of sweet, savoury and tangy flavours that will leave you craving more.

Ingredients 5 Number of Servings

1 box Barilla Gemelli Pasta

4 tbsp olive oil

1 tbsp white balsamic vinegar

1 lb strawberries, quartered

1 cup bocconcini, halved

1 cup basil, julienned

1 rip avocado, diced

Salt and pepper to taste

Optional: toasted pine nuts for garnish

Instructions

  • Place a pot of water to boil, cook Barilla Gemelli pasta according to directions but drain 1 minute sort. Drizzle with 1 tbsp olive oil, place flat on a sheet tray and let cool down to room temperature.

  • Meanwhile whisk white balsamic vinegar with remaining olive oil, season with salt and pepper and set aside. 

  • Cut the bocconcini cheese, strawberries, avocado and basil.

  • Place pasta in a large bowl. Add in bocconcini cheese, strawberries avocado and basil. Add dressing. Mix all together and serve.
