Ingredients for 6 people       

  • 1 BOX Barilla Mini Wheels
  • 4 TABLESPOONS Extra Virgin Olive Oil Divided
  • 1 Fresh Lemon
  • 2 CUPS Frozen Peas
  • 1 POUND Boneless Skinless Chicken Breast Diced
  • 5 SLICES Bacon Cut Into Strips
  • 2 CUPS Cherry Tomatoes Halved
  • 1 CUP Fresh Mozzarella Cheese Cubed (May Substitute Shredded Mozzarella Cheese)

Instructions

  • BRING a large pot of water to a boil
  • COOK Mini Wheels for 6 minutes; drain and drizzle with 2 tablespoons of oil
  • SPREAD pasta on a cookie sheet or baking tray to cool
  • JUICE lemon to yield 2 tablespoons lemon juice
  • BRING a medium pot of salted water to a boil
  • ADD peas and boil for 5 minutes; drain and cool
  • HEAT a medium skillet over medium heat
  • ADD remaining oil and chicken
  • COOK for 4-5 minutes or until cooked through; season with salt and pepper
  • ALLOW chicken to cool
  • COOK bacon in same skillet until crispy; drain fat and allow to cool
  • COMBINE all ingredients and allow to rest 30 minutes before serving
