Ingredients 8 Servings
- 1 box Barilla® Rotini
- 3 tablespoons extra virgin olive oil
- 1 cup arugula
- 1 clove garlic
- 1 tablespoon pine nuts
- 1 tablespoon Parmigiano-Reggiano cheese - grated
- 6 leaves fresh basil
- Salt and black pepper to taste
- 1 pound medium size shrimp
- 2 cups green beans cut 1/2 inch

Instructions
- Bring a large pot of water to a boil
- Meanwhile, in a blender PROCESS pine nuts, garlic, and cheese
- Add arugula and basil; blend well
- Drizzle in 2 tablespoons olive oil with a few ice cubes and process until creamy
- Cook pasta according to package directions
- Meanwhile, add beans to the boiling water with the pasta
- In a skillet, heat remaining olive oil, and sear shrimp on both sides
- DRAIN pasta, making sure to reserve 1/2 cup of pasta cooking water
- Add drained pasta, beans and 1/2 cup cooking water to the skillet with the shrimp
- REMOVE from the heat and fold in the pesto
