Ingredients for 6 people
- 1 box Barilla® Blue Box Spaghetti
- 5 tablespoons extra virgin olive oil
- 2 garlic cloves, chopped
- 2 jars roasted peppers, sliced thin
- 1 bag baby spinach
- Salt and black pepper to taste
- ½ cup Pecorino cheese, shredded
- ½ cup pine nuts, toasted

Instructions
- Bring a large pot of water to a boil
- Meanwhile in a large skillet sauté garlic in olive oil for 1-2 minutes, then add peppers and turn the heat to high
- Sauté for 3-4 minutes then season with salt and pepper
- Cook pasta according to package directions
- Drain and toss the pasta with the roasted peppers and spinach
- Remove the skillet from the heat and fold in half the cheese
- Top with remaining cheese and pine nuts
