Fall in love with this spooky Halloween themed pasta from Barilla ! Squid ink may seem scary, but we promise this recipe makes it accessible for home cooks. An easy way to cook with squid ink is to let it come to a simmer within your pasta mixture. Fold the blistered orange cherry tomatoes in with your squid ink pasta and top with some shredded parmesan. Ingredients for Spooky Halloween Pasta:
- 1 box Barilla® Thick Spaghetti pasta
- 4 tablespoons extra virgin olive oil, divided
- 1 pint orange grape tomatoes
- 2 cloves of garlic, minced
- ½ cup dry white wine
- 2 tablespoons squid ink
- 1 tablespoon Italian parsley, chopped
- 3 tablespoons shredded parmesan cheese

Cook pasta according to package directions and drain.

In a large skillet, heat 1 tablespoon of olive oil over medium/high heat until it shimmers. Add the tomatoes and let cook until blistered and browned. Set tomatoes aside.

Return the skillet to the heat, add remaining olive oil and sauté garlic for 1 minute. Add parsley and white wine. Let it simmer until it is reduced by half.

Add squid ink to the mixture, add pasta and toss with the sauce.

Remove from heat and top with blistered tomatoes.

Garnish with parmesan cheese before serving.
