Fall in love with this spooky Halloween themed pasta from Barilla ! Squid ink may seem scary, but we promise this recipe makes it accessible for home cooks. An easy way to cook with squid ink is to let it come to a simmer within your pasta mixture. Fold the blistered orange cherry tomatoes in with your squid ink pasta and top with some shredded parmesan. Happy Halloween!

Ingredients for Spooky Halloween Pasta:

  • 1 box Barilla® Thick Spaghetti pasta
  • 4 tablespoons extra virgin olive oil, divided
  • 1 pint orange grape tomatoes
  • 2 cloves of garlic, minced
  • ½ cup dry white wine
  • 2 tablespoons squid ink
  • 1 tablespoon Italian parsley, chopped
  • 3 tablespoons shredded parmesan cheese

Instructions

  • Cook pasta according to package directions and drain.

  • In a large skillet, heat 1 tablespoon of olive oil over medium/high heat until it shimmers. Add the tomatoes and let cook until blistered and browned. Set tomatoes aside. 

  • Return the skillet to the heat, add remaining olive oil and sauté garlic for 1 minute. Add parsley and white wine. Let it simmer until it is reduced by half. 

  • Add squid ink to the mixture, add pasta and toss with the sauce. 

  • Remove from heat and top with blistered tomatoes. 

  • Garnish with parmesan cheese before serving.
