Ingredients for 4 people

  • 1/2 box Barilla® Gemelli
  • 2 tablespoons pine nuts
  • 2 tablespoons extra virgin olive oil
  • 1 clove garlic, minced
  • 1 medium zucchini, julienne
  • 2 medium carrots, julienne
  • 1/2 cup Parmigiano-Reggiano cheese, freshly grated
  • 1/2 teaspoon salt
  • 1/8 teaspoon black pepper, freshly ground

Instructions

  •  Bring a large pot of water to a boil

  •  toast pine nuts in a large skillet over medium heat 4 to 5 minutes or until golden brown

  • Remove from skillet set aside

  • Heat oil in skillet over medium-high heat
  • Stir in garlic cook 30 seconds
  • Add zucchini and carrots sauté 6 to 7 minutes or until crisp-tender
  • Stir in pine nuts remove from heat
  • Meanwhile, cook Gemelli according to package directions drain and return to pot

  • Add cooked vegetable mixture and remaining ingredients to hot gemelli toss
  • Transfer to serving platter
