1 box Barilla® Red Lentil Rotini(https://027f4a33091c41fd982ad13126d58f65.isf-prod.com/en-us/products/pasta/legume/red-lentil-rotini)
8 oz. Monkfish, cut in pieces
3/4 cup Cauliflowers
1/4 cup Black Pitted Olives
4 oz. Fava Beans
1 Garlic clove
2 tbsp Extra Virgin Olive Oil

Instructions

  • Deep the fava beans in boiling water for 1 inch, cool down in cold water and peel. In the same water blanche the cauliflowers sprouts
  • Drain and set aside
  • Heat a pan with the olive oil and a garlic clove
  • Sauté the monkfish, add the cauliflowers, the pitted olives and the fava beans
  • Cook the Rotini according to package directions
  • Drain and sauté in the pan with the ingredients, adding a little of the cooking water, olive oil and some mint leaves
  • Sauté, add herbs and pepper. Serve
