  • 1 box of Barilla® Chickpea Orzo pasta
  • ½ cup baby cucumber, small diced
  • ½ cup shelled pistachios, salted, and roasted, roughly chopped
  • ⅓ cup fresh herbs, chopped (basil, parsley, tarragon, or chives)
  • ⅓ cup diced red bell pepper
  • 2 cloves garlic, minced
  • ⅓ cup diced red onion
  • ½ cup feta cheese, crumbled
  • ½ cup small radish, diced
  • ½ cup shredded carrot, chopped
  • ½ cup pickled and sliced mild banana peppers, chopped
  • ½ cup Kalamata olives, chopped
  • ⅓ cup extra virgin olive oil
  • ¼ cup white balsamic vinegar
  • ½ teaspoon kosher salt
  • ½ teaspoon fresh ground black pepper
  • 12 small romaine or butter lettuce leaves (optional)

  • Bring a large pot of water to a boil. Cook pasta according to package directions. Drain well and transfer to a large bowl.
